MmMmMm Truffles

Tomorrow we’re having a potluck at work. When I put my name on the sheet I wrote: “some kind of dessert”. Vague enough? I thought so. I don’t like to give away my ideas (mainly because I didn’t have one yet).

When i got home tonight I broke out my recipe books

There were way too many choices.. but I opted for the one with the fewest ingredients/or ones i already had.

I ended up going with Chocolate Truffles

If you’d like to know the recipe here goes:

  • 3 cups (18 ounces) semi sweet chocolate chips
  • 1 can (14 ounces) Eagle Brand sweetened condensed milk NOT evaporated milk
  • 1 tablespoon of vanilla extract
  • Your choice of coatings: coconut, sprinkles, colored sugar, unsweetened cocoa, powdered sugar, nut (i dont like nuts though) whatever you can find really!

 

  1. In a heavy saucepan (i’m not sure what constitutes heavy) over low heat, melt chips and condensed milk. Remove from heat, stir in vanilla
  2. Chill 2 hours or until firm. (i put it in the freezer for a bit, probably longer than it needed but it was fine)
    Next time, I may add the Malibu instead of the Vanilla….
  3. Shape into 1 inch balls and roll in desired coating. I used a melon baller to scoop out the balls. The heat from your hands will smooth them out before you roll in your choice of toppings.

  4. Chill 1 hour until firm. Store covered at room temperature. Makes ~6 dozen truffles. I used cupcake liners to keep them all in. One of each green sprinkles and powdered sugar. I figured this would be the easiest way for people to take them without touching ALL of them.
  5. There are other options, Amaretto or Orange truffles, substitute 3 tables spoons of either for the vanilla. Yum.

I haven’t tasted them yet, but they smell delicious.. i’ll have one tomorrow.. or two. (=
